"Justin was totally blown away when he walked in. He had no idea," a source told People magazine.
Amongst the nearly 100 friends and family assembled to greet Timberlake on his 28th birthday were the couple's parents.
Biel, 26, who has been dating Timberlake since January 2007, planned the surprise to the minutest detail and visited the hotel before the event to make sure everything was in place. During the festivities, she played the perfect hostess alternating her time with guests and her beau.
"They held hands and relaxed," says a guest. "They seemed very happy together."
In the past Jessica has said she is open to marriage but is more excited with the thought of sharing her life with a soul mate.
She is, however, categorical that she wants to be a mother.
Motherhood is "something that I feel is a rite of passage as a woman," she told Harper's Bazaar.
